Bun Ca is a fish soup with fresh noodles and fresh vegetables very famous in Vietnam, usually uses local river fish.
It seems a simple soup, but it is not! It is highly elaborate and carries two different broth: first broth is made with fish bones and snake fish head, boiled in water with ginger and onion for many hours. The second broth is a vegetable broth made with tomatoes, green onions, onions, ginger, parsley, dill, and it's cooked only until boils.
For serving, they heat up the fresh noodle in hot water, put a crispy fish fillet on top, usually tilapia, next they mix the fish broth filtered, with the vegetable broth including any pieces of vegetable left, topped with fresh bamboo roots, fresh green onions and finalized with dill and tiny pieces of pineapple.
On the table they serve you a plate of fresh green leafs, with a very special sauce that has hot pepper, vinegar, fish sauce and garlic.
They believe this soup is very healthy, fights diabetes, hypertension, it is very nutritious and very rich in flavors, and the best... cheap price and on the access of all. On the streets of Hanoi you can get it for approximately 1,5 dollars.
Of course, my advice is: choose well where you are going to eat! Most street food are not too clean, and when you first arrive you stomach is not prepared to deal with it, and you might get a little sick... but, it happens to all adventurous foreigners, so don't worry so much and enjoy your experience!
This bun ca in the picture is made by my maid cause I am so lucky she is an amazing cook and she is all aware about the hygiene standards of western world and she makes me the best Vietnamese traditional food!
